Have you ever craved breakfast at totally the wrong time of day, Like at 3 p.m. or maybe even at midnight Well, same here and that’s actually how these McGriddle Bites were born.

I was standing in my kitchen and I was tired and I was wearing mismatched socks because laundry was not my top priority and I was thinking, “Ugh, I’d kill for that sweet and savory magic that McD’s somehow puts into a sandwich” but dragging everyone to the drive-thru was just not happening.

So I decided to be a little bold and I mixed some pancake batter with a whisper of maple syrup or actually more like a good glug and then I grabbed some sausage and some eggs and I put it all together so voilà, these little bites happened and let me tell you, they were a total game-changer.

My kid called them “breakfast cookies” and honestly, I’m not even mad because that’s pretty accurate.They’re soft and they’re sweet and they’re a little salty and they’re dangerously easy to eat so like, gone before they cool kind of easy.

Oh and here’s a pro tip if you make these with the help of a little one, just know the bites might turn out a little “wonky-shaped” but that’s okay because that’s what love looks like in the kitchen.
