Best Almond Butter

I made this almond butter with a little help from a family member and it was mostly moral support and the occasional is it supposed to look like that comment and at first it was crumbly and dry and not cute at all so I almost gave up but then suddenly happened and the almonds released their oils and the blender smoothed everything out and there it was creamy and warm and so good that it felt unreal.

What I love about this recipe is that it is just almonds and that is it. So there is no weird stuff at all .

Kitchen Equipment Needed :

  • Food processor or high speed blender
  • Baking sheet if roasting almonds
  • Spatula for scraping the sides
  • Measuring spoons
  • Airtight jar for storage

Tips for Almond Butter

– You may notice some oil separating on top over time. This is completely normal. Just stir it before using. Always use a clean spoon to keep it fresh and safe to eat.

– Use warm almonds because they blend faster and more smoothly than cold ones. If your almond butter seems too thick, give it more time before adding oil because almonds release oil slowly. Scrape the sides often so all the almonds blend evenly.

– Always let the machine rest if it gets hot, especially when blending for several minutes.

– For crunchy almond butter, set aside a handful of chopped almonds and stir them in at the end.

What to Eat with Almond Butter ??

Almond butter is smooth and nutty, so I love using it in easy meals and snacks throughout the day. I usually spread it on Homemade Bagels or toast for a quick breakfast, and sometimes I swirl it into oatmeal to make it more filling.

My kids enjoy it with apple slices, bananas, or crackers, and they often have it as an after-school snack with a glass of Homemade Banana Milk.

How to Make Almond Butter :

Step 1

Begin the process by preparing your almonds. If you are using raw almonds, spread them on a baking sheet and roast them in the oven until they smell warm and nutty. Let them cool slightly, but keep them warm because warm almonds blend more easily. If you are using roasted almonds, you can move straight to the next step.

Step 2

While it bakes place the almonds into your food processor or high speed blender. Secure the lid and start blending. At first, the almonds will break down into a coarse, sandy texture. This is normal, so don’t stop. Pause occasionally to scrape down the sides so everything blends evenly.

Step 3

Follow up by keep blending and be patient. The almond mixture will go from crumbly to thick and clumpy, and then slowly it will become smooth and creamy. This can take several minutes depending on your machine. If the mixture looks too dry, you can add a teaspoon of oil to help it along.

A creamy homemade almond butter made with just almonds and a little patience, perfect for spreading on toast, adding to smoothies, or enjoying as a simple snack.

Ingredients

  • 3 cups raw almonds (about 420 g)

  • 1–2 tablespoons honey or maple syrup "optional, for sweetness"

  • ¼ teaspoon salt "optional"

  • 1–2 teaspoons neutral oil such as almond oil or coconut oil "optional, only if needed for blending"

Directions

  • Begin the process by preparing your almonds. If you are using raw almonds, spread them on a baking sheet and roast them in the oven until they smell warm and nutty. Let them cool slightly, but keep them warm because warm almonds blend more easily. If you are using roasted almonds, you can move straight to the next step.

Notes

  • Let roasted almonds cool slightly before blending to avoid overheating the processor.
  • Do not add liquid; almonds release their own oils naturally.
  • Blend longer for ultra-smooth almond butter or stop early for a crunchy texture.
  • Almond butter is great for toast, smoothies, baking, and sauces.
  • Homemade almond butter keeps well in the fridge for up to 2–3 weeks.
