But hey since we live and learn and after a few more tries with fewer disasters this creamy zucchini soup has become a total favorite around here and I’m talking about the kind of favorite where you have to make a double batch or deal with soup thieves.

  • 2 tablespoons olive oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium zucchinis , sliced
  • 3 cups vegetable broth or chicken broth

  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream or coconut milk optional
  • 1/4 cup grated Parmesan cheese optional, for extra flavor

How to Make Creamy Zucchini Soup
