However that is exactly how these banana bread muffins were born because I felt guilty and I was stubbornly refusing to waste food.
Turned out amazing because the muffins came out with golden tops and soft insides and the whole kitchen filled with that cozy banana and cinnamon smell which basically screams comfort.
And you know those snacks that somehow disappear the second you bake them? These muffins are exactly that because I made a dozen and my kids ate three before they even cooled down and honestly I had two myself while standing over the sink.
I kept telling myself “just one more” yet that was the lie of the century.
So if you have sad bananas and a craving for something warm and sweet then you are in the right place because these muffins are simple and forgiving and they always turn out to be total crowd-pleasers.

Tips for
Use ripe bananas: the more brown spots, the sweeter and more flavorful the muffins will be.
Don’t overmix: stir just until the flour disappears. Overmixing can make the muffins tough.
Customize them: add cinnamon, chocolate chips, blueberries, or nuts for extra flavor.
Check early: oven times vary, so start checking at 18 minutes.
Make mini muffins: use a mini muffin pan for bite sized treats. Just bake for about 12 minutes.

How to Make banana bread muffins:
Step 1
First Preheat the oven: set your oven to 350°F and line a muffin pan with paper liners or grease it lightly and mash the bananas: in a large mixing bowl, mash the bananas until smooth. This is fun for kids to do with a fork.

Step 2
Second add wet ingredients: stir in the melted butter, sugar, beaten egg, and vanilla extract. Mix well until combined then add dry ingredients: sprinkle in baking soda, salt, and flour. Stir gently until the batter is just mixed. Don’t over stir, or the muffins may turn out dense.
Step 3
Third add extras: fold in chocolate chips, nuts, or any mix ins if you like and fill the muffin pan: scoop the batter evenly into the muffin cups, filling each about two thirds full.


Step 4
Finally bake: place in the oven and bake for 20–22 minutes, or until a toothpick inserted in the center comes out clean then cool and enjoy: let the muffins cool slightly in the pan, then move them to a rack to finish cooling.
Can I use frozen bananas?
Yes , thaw them first and drain extra liquid before mashing.
