last Wednesday middle of the week because the kids were cranky and my energy was at level toast so dinner needed to magically appear fast.

Then I remembered this gem which is Primavera Stuffed Chicken and even though it sounds fancy don’t be fooled because it’s basically a spring garden wrapped in juicy chicken.

I forgot to seal the edges well so it all oozed out like lava which made a total mess yet it was still delicious
It’s got all the good stuff such as colorful veggies along with melted cheese and a punch of flavor that makes your taste buds do a little happy dance.My partner said it tastes like summer on a plate so I’m choosing to take that as a compliment.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, thinly sliced
  • 1 small zucchini, julienned
  • 1 yellow bell pepper, thinly sliced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 small carrot, julienned
  • 1 cup baby spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder

How to Make Primavera Stuffed Chicken

Follow these steps to create your mouth-watering Primavera Stuffed Chicken:

Step 1

Preheat your oven to 375°F (190°C). Grease a baking dish with a little olive oil or cooking spray. then Prepare the chicken breasts by slicing them open to create a pocket. Be careful not to cut all the way through. Season both sides with salt, pepper, garlic powder, and Italian seasoning.

Step 2

Sauté the vegetables. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add bell peppers, zucchini, carrot, and spinach. Cook for 3–4 minutes until softened but still a little crunchy. Remove from heat and let it cool for a few minutes. after that Mix the cheeses in a bowl and combine them with the sautéed vegetables. This will be your stuffing.

Step 3

Stuff each chicken breast with the veggie and cheese mix. Use toothpicks or kitchen twine to keep them closed. then Sear the chicken in a skillet over medium-high heat with the remaining olive oil for about 2–3 minutes on each side. This helps seal in the juices and adds color.

Step 4

Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). and Let it rest for 5 minutes before removing the toothpicks and serving. Once cooked, remove the skillet from the oven and allow the chicken to rest for 5 minutes.
