I swear this started as a “lazy dinner” idea because you know the kind when you open the fridge and stare like it’s going to whisper meal ideas then you grab the hot sauce and chicken since well it’s Buffalo o’clock.

I tried making the recipe last month I overdid the hot sauce and it was like “call the fire department” level spicy but my husband took one bite then chugged his drink yet he still went back for seconds so that’s how you know it’s a keeper.

Honestly casseroles are underrated because they’re forgiving of like life right since you toss everything in and hope for the best then cross your fingers it bubbles up golden and perfect and spoiler alert this one totally does.

Have you ever had Buffalo wings and thought “I wish this came in a cozy cheesy weeknight-dinner form” because boom here it is with no messy fingers but just full-on flavor.

Ingredients :

  • 3 cups cooked shredded chicken rotisserie chicken works great!
  • 1 cup buffalo wing sauce like Frank’s RedHot
  • 1 cup ranch dressing
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 2 cups cooked pasta like penne or rotini or cooked rice optional
  • 1 tablespoon garlic powder or garlic granules
  • 1 (8-ounce) package cream cheese, softened

  • 1 cup celery, chopped for crunch
  • 1/2 cup blue cheese crumbles

How to Make Buffalo Chicken Casserol

Step 1

Preheat the oven to 350ºF (177ºC) and move the rack to the lower third of the oven. Generously butter or spray with nonstick cooking spray; set aside.and In a large mixing bowl combine Frank’s Red Hot Original Sauce 2 tablespoons, garlic powder 1 tablespoon, black pepper 1 1/2 teaspoon , paprika 1 1/2 teaspoons, and salt 3/4 teaspoon.then Mix the cooked chicken with buffalo sauce and ranch dressing in a big bowl. This gives the chicken that spicy, creamy flavor.

Add softened cream cheese to the bowl and stir everything together. The cream cheese makes the casserole rich and creamy, and If you want to include pasta or rice, stir it in now. This helps make the dish more filling, then Cook the pasta (8 ounces) in well-salted water, according to box instructions. Cook just until al dente. Drain. Do not rinse!

When the chicken is finished marinating,. Using a slotted spoon, transfer the chicken cubes, shaking off as much marinade as possible, and brown on each side of the chicken. Cook for 3 to 4 minutes each side, then Add chopped green onions, celery, and half of the shredded cheeses to the mixture. These add flavor and texture.
