  • 3 large eggs
  • 1 large egg yolk
  • 80 g (about ¾ cup) grated Parmesan cheese or Pecorino Romano
  • 2 cloves garlic, finely chopped
  • 2 tablespoons olive oil or butter
  • Freshly ground black pepper, to taste
  • Salt, for the pasta water

Initially bring a large pot of water to a boil. Add a generous pinch of salt it should taste a little like the sea. Drop in your pasta and cook it according to the package directions until it’s al dente, which means tender but still slightly firm when you bite it. Before draining, scoop out about one cup of the starchy pasta water and set it aside. This water is very important for the sauce.
