It started with a heatwave and it wasn’t the graceful kind where you sip iced tea while fanning yourself on the porch but instead it was the sweaty and cranky kind of summer day when you just want everyone to stay far away. That’s why I grabbed a couple of cucumbers both out of habit and a little bit out of hope because funny enough I almost didn’t even make this at all. I was just aiming for a quick snack yet somehow I stumbled into what became one of my all-time favorite summer sides and honestly go figure.
You know those dishes that only take about five minutes to make yet somehow make you feel like you’ve got your life together even when you’re still in pajama shorts at 3 p.m. and dinner is still a complete mystery.

Batch had way too much vinegar so my face did that scrunchy thing but when I made it again the second recipe it was magic since it turned out creamy and tangy and fresh and it basically tasted like a picnic in a bowl.

Ingredients :
- 2 large cucumbers sliced thin
- ½ small red onion optional, thinly sliced
- ½ cup sour cream or plain Greek yogurt
- 1 tablespoon mayonnaise
- 1 tablespoon white vinegar or lemon juice
- ½ teaspoon sugar optional
- Salt to taste
- Freshly ground black pepper to taste
- 1 tablespoon chopped fresh dill or 1 teaspoon dried dill

Step 1
The first thing you need to do is wash and slice the cucumbers. First, wash the cucumbers well. Using a knife or a mandoline slicer, slice them into thin, round slices. Place them in a large bowl.

If you’d like a less watery salad, sprinkle the cucumber slices with a little salt and let them sit for 10 minutes. Then gently squeeze out the excess water using a clean towel or paper towels.
And If you’d like to add onions, slice the red onion into thin slices and add them to the bowl of cucumbers. This step adds a little crunch and flavor, but you can skip it if you don’t like onions.

Now let’s make the dressing. In a separate small bowl, mix together the sour cream or yogurt, mayonnaise, vinegar or lemon juice, sugar, salt, pepper, and dill. Stir until smooth and creamy.
