So here is the thing and I was supposed to be making something elegant for our backyard BBQ because you know the kind of dessert that says “I have got it all together” but then I saw a bottle of pink lemonade sitting in the fridge and it looked lonely so it was basically begging to be turned into something magical and that is how these cookies happened With the addition of pink color, it increases your appetite.

was lemony and sweet and soft with just the tiniest zing so it was basically sunshine in cookie form

As for the color it is absolutely adorable because it looks like Barbie meets summer picnic and the flavor is kind of nostalgic since it feels like sipping pink lemonade at a cousin’s birthday party while your fingers are sticky and your knees are covered in grass stains so maybe you have been there too or maybe it is just me.

Anyway these cookies are dangerously good and they are light and fluffy and a little chewy so there is no judgment if you eat half the tray straight from the oven because I have been there too.

  • 1 box lemon cake mix
  • 1/3 cup pink lemonade powdered drink mix like Crystal Light or Country Time
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tablespoon lemon juice optional for extra zing
  • Pink food coloring optional, for a brighter pink look
  • 1/2 cup powdered sugar for rolling

How to Make Pink Lemonade Cookies

Step 1

The first thing you need to do is preheat the oven to 175°C (350°F) and line a baking sheet with baking paper. Get a large bowl and combine the lemon cake mix and pink lemonade powder. Mix well.

Next, add the eggs, vegetable oil, and lemon juice (if using). Stir until a soft dough forms. You can also add a drop or two of pink food coloring if you’d like your cookies to be even pinker! Then, take about a tablespoon of dough and roll it into a ball.

Now, roll each ball of dough in powdered sugar until completely coated, then place them on the baking sheet about 2 inches apart. Bake for 9-11 minutes, or until the edges are set and the surface is beautifully cracked.

Step 4

The final step is to let them cool in the pan for 2-3 minutes before transferring them to a wire rack to cool completely.
