Baked Brie and Preserves

Imagine this: it was a Sunday afternoon and we had friends coming over in just 20 minutes so of course I was still in my pajama pants. I had picked up some fancy cheese at the last minute but it was just sitting there on the counter, kind of judging me.

That’s when baked brie came to the rescue.
Honestly, this dish saved me well, at least my social life. It’s gooey and sweet and salty and feels kind of fancy even though it takes almost no effort. All I did was spread some preserves on it, wrap it up, then pop it in the oven. And just like that, I had an appetizer that looked like I actually planned something.

Plus, you can use whatever preserves you have. Fig, raspberry, apricot—basically anything that’s been hiding in your fridge will probably work. Even that half-used jar from last Christmas? Totally fine.
So now, here’s how you can make this ridiculously easy, dangerously delicious cheese bomb.

Ingredients :

  • 1 round of Brie cheese 8 oz or 250g
  • 3 tablespoons of fruit preserves “apricot, raspberry, fig, or your favorite”
  • Optional: chopped nuts (pecans, almonds, or walnuts)
  • Optional: a sheet of puff pastry (for wrapping, if desired)
  • Optional: 1 egg ” for egg wash if using puff pastry “
  • Crackers, sliced baguette, or apple slices for serving

How to Make Baked Brie and Preserves

Step 1

Preheat your oven to 375°F “190°C”.

Unwrap your Brie and place it on a parchment-lined baking sheet or in a small baking dish.

Spoon the preserves over the top of the Brie. Spread gently so it covers the center.

Step 2

If using nuts, sprinkle them on top of the preserves.

“Optional ” If using puff pastry: roll it out slightly and place the Brie in the center. Fold the pastry over the cheese and press to seal. You can use a little water to help it stick. Brush the outside with a beaten egg to give it a golden color when it bakes.

Step 3

Bake for 12–15 minutes if not using pastry, or 20–25 minutes if wrapped in puff pastry. You’ll know it’s ready when the cheese is soft and the pastry is golden.

Let it cool for about 5 minutes before serving—this helps it firm up slightly and makes it easier to slice.

Kitchen Equipment Needed :

  • Baking sheet or small oven-safe dish
  • Parchment paper “optional, for easier cleanup”
  • Knife
  • Spoon
  • Small bowl for egg wash, if using puff pastry
  • Oven mitts

  • Baking Without Puff Pastry: If you skip the pastry, consider placing the Brie in a small oven-safe dish to catch any melted cheese and make cleanup easier .
  • Room Temperature Brie: Let the Brie sit out for 10–15 minutes before baking to help it melt more evenly in the oven .
