this was that kind of Crockpot Italian Meatball Subs, it all started on a chilly Sunday when the weather called for staying in home much longer than acceptable while pretending to be productive at the same time. My youngest was busy drawing on the wall once again a so honestly I just wanted something warm and comforting without needing to watch over the stove every minute.
That’s when the crockpot came to the rescue because I tossed in the meatballs along with a hopeful prayer and a jar of sauce then left them to bubble quietly on their own while I dealt with the chaos of crayons . The smell began to slowly spread through the house until it felt like a warm hug from a loving Nonna even,I imagine she would cook exactly like this.

And when it was finally time to eat the room went silent in the best way possible because I didn’t hear a single peep from the kids until their plates were completely empty which felt like a total win.
These Italian meatball subs are wonderfully messy and incredibly melty while being so ridiculously good that you can’t help but love them since the soft buns hold juicy meatballs and melted cheese all together in the most perfect way you can imagine.

Here’s what you’ll need to make meatball subs:
- 1 ½ pounds ground beef or “ground turkey”
- 2 teaspoons extra-virgin olive oil
- ½ cup breadcrumbs
- ¼ cup grated parmesan cheese
- 1 large egg
- ¾ cup water
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 cups marinara or spaghetti sauce
- 4 sub rolls – for serving

- shredded mozzarella cheese – for garnish
- Optional: fresh basil or parsley for garnish

How to Make Crockpot Italian Meatball Subs
Step 1
Make the meatballs: In a large mixing bowl, combine the ground meat, breadcrumbs, parmesan, egg, garlic, oregano, basil, salt, and pepper. Use your hands or a spoon to gently mix everything until combined. Roll the mixture into small meatballs.
Add the Italian sausage and ground beef to a large bowl with the whisked egg, breadcrumb mixture, Use your hands to mix the ingredients together. Avoid overmixing the meat.

Layer in the crockpot: Pour a bit of marinara sauce into the bottom of the slow cooker. Add the meatballs in a single layer, then cover them with the rest of the marinara sauce. Make sure all the meatballs are coated with sauc.
