Easy Cabbage Soup

I’ll be honest because cabbage soup didn’t exactly scream “comfort food” to me when I was growing up and instead it felt more like “Ugh, do I really have to” since my mom used to make it whenever the fridge was looking a little sad so you know the drill which usually meant half a cabbage plus some lonely carrots and maybe even a rogue onion rolling around in the back.

But the funny thing is that somewhere along the way I actually started craving it so maybe it’s the way it warms you up from the inside out or maybe it’s just nostalgia sneaking in through the steam and either way this soup slowly became a staple especially on those “no energy and all I want is blanket and soup” kinda days.

And listen because the first time I made it on my own it was a disaster since I forgot to season it which was a rookie move and it ended up tasting like hot veggie water but hey we live so we learn and now we always salt the soup.

Now it’s one of those recipes I turn to whenever I want something hearty while still being low-fuss and bonus points if there’s some crusty bread involved.

Have you ever tried cabbage soup because if not this might really surprise you since it’s simple and humble yet somehow still magical
