Ingredients :

  • 4 large flour tortillas spinach or whole wheat tortillas work great too
  • 1 cup cream cheese or hummus your choice
  • 1 cup shredded carrots
  • 1 cup baby spinach leaves
  • 1/2 red bell pepper, thinly sliced
  • 1/2 yellow bell pepper, thinly sliced
  • 1/2 cucumber, julienned or thinly sliced
  • Salt and pepper to taste
  • Optional: shredded cheese, sliced olives, or turkey slices

How to Make Fresh Vegetable Tortilla Roll Ups

Step 1

The first thing you need to do is place the tortillas on a flat surface or cutting board. Make sure they’re fresh and soft; if they feel hard, heat them briefly in the microwave for 10 seconds.

Step 2

Don’t forget to spread the cream cheese or hummus evenly over the surface of each tortilla. Use the back of a spoon or a butter knife to gently spread it all the way to the edges.

For this step, roll each tortilla tightly from one end to the other, like a jelly roll. Try to keep the roll taut so the filling stays inside.

Step 5

Now, cut the rolled tortillas into one-inch circles using a sharp knife. Wipe the knife between the slices to keep them neat. Finally, you can serve immediately or refrigerate for up to 4 hours before serving for the best texture.
