We were starving and you know that kind of hunger where even the crumbs on the counter start looking gourmet so yeah that was us because it had been one of those long and weird Saturdays where nothing quite goes as planned since the grocery run turned into a treasure hunt and the quick clean-up somehow became a full-blown spring cleaning.

So there I was and I was staring into the fridge like it owed me dinner and guess what I found chicken so check then potatoes so yep and garlic and Parmesan so jackpot.

Now I won’t lie because once upon a time I made this I overloaded the garlic and my husband didn’t mind but the kids well let’s just say breath mints were handed out like candy.

But oh when it all came together with crispy potatoes and juicy chicken and that cheesy garlicky crust then it was like dinner had forgiven me for everything that went wrong earlier and it became the kind of meal that makes you forget to the flavor of the new recipe.

  • 4 boneless, skinless chicken breasts or thighs
  • 4 medium potatoes, diced Yukon gold or red potatoes work well
  • 4 tablespoons olive oil
  • 5 tablespoons unsalted butter, melted
  • 5 garlic cloves, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • ¾ cup grated parmesan cheese Plus more for topping
  • Fresh parsley for garnish optional

How to Make Garlic Parmesan Chicken & Potatoes

Step 1

The first thing you need to do is preheat the oven to 200°C (400°F). Lightly grease a large baking tray or line it with baking paper. The next step is to prepare the chicken and potatoes: Place the chicken breasts and diced potatoes in a large mixing bowl. Drizzle with olive oil and melted butter.

Step 2

Then add the seasonings: sprinkle with minced garlic, garlic powder, onion powder, dried oregano, dried parsley, salt, pepper, and Parmesan cheese. Mix well until the chicken and potatoes are fully coated. Arrange in the baking tray: Spread the chicken and potatoes in a single layer in the prepared baking tray. If using a baking tray, make sure the pieces are not too crowded so they cook evenly and become crispy.

Now let’s bake: Place the tray in the oven and bake for approximately 35-40 minutes. Halfway through, stir the potatoes until evenly browned. And the final touch: In the last five minutes of baking, sprinkle a little Parmesan cheese on top and let it melt and brown slightly.

Ensure the chicken is cooked through: Make sure the chicken is cooked thoroughly and the potatoes are tender when pierced with a fork. The internal temperature of the chicken should be at least 74°C. Now you can garnish and serve: Sprinkle with fresh parsley, if desired, and serve hot.
