Turn the heat down to medium-low. Let the onions cook slowly for about 25–35 minutes. Stir every few minutes so they don’t burn. They will slowly turn soft, golden, and then deep brown.

When the onions are dark golden brown and very soft, add the brown sugar, salt, pepper, and thyme. Stir well.
