You know those days when everything just feels off and nothing goes quite right Well, this dish came to life on one of those exact days because I had overcooked the Pan Pizza the night before so the sink was overflowing with dishes and I was seriously about to give in and order takeout when I suddenly spotted some salmon in the fridge which had been completely forgotten and honestly looked like it was judging me.

Creamy garlic salmon definitely wasn’t part of any plan yet I decided to go for it using whatever I could find so I grabbed some cream and a few garlic cloves and to my surprise it turned out way better than I ever expected since the sauce came out rich and velvety while the salmon got those delicious crispy edges and I might’ve even done a small happy dance in the kitchen.

Have you ever tried making something that felt kind of fancy even though you weren’t really trying that hard That’s exactly the kind of vibe this dish gives off since it’s super simple and it doesn’t need any extra fuss yet it still delivers bold and satisfying flavor.

Ingredients :

To create this Creamy Garlic Salmon, you’ll need the following ingredients :

Main Ingredients :

  • 4 salmon fillets skin-on or skinless, ~6 oz each
  • Salt and pepper, to taste
  • 1–2 tablespoons olive oil or butter

For the Creamy Garlic Sauce :

  • 2 tablespoons butter
  • 5–6 cloves garlic, minced
  • 1 cup heavy cream or half-and-half for lighter version
  • ½ cup chicken broth or dry white wine
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon lemon juice freshly squeezed
  • Salt and pepper, to taste
  • 1–2 cups baby spinach “optional”
  • Fresh parsley, chopped for garnish

Add green beans to the dish,This is optional for me.

How to Make Creamy Garlic Salmon

Step 1

Season salmon with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear salmon skin-side down if using skin-on for about 4–5 minutes per side, or until golden and just cooked through. Transfer to a plate and set aside.

And In the same skillet, lower heat to medium. Melt 2 tablespoons butter. Add minced garlic and onions if using. Sauté for 1–2 minutes, until fragrant and softened.

Step 2

Add sun-dried tomato oil and chopped sun-dried tomatoes. Stir in chicken broth or wine and let it simmer for 1–2 minutes to deglaze the pan. Pour in heavy cream and stir to combine. Add Parmesan, Italian seasoning, and chili flakes if using. Simmer gently until sauce slightly thickens about 3–4 minutes.

Step 3

Stir in baby spinach and cook until wilted. Return salmon fillets to the pan and spoon sauce over them. Simmer for another 2–3 minutes to warm through and meld flavors.

Garnish with chopped parsley or basil. Serve hot with pasta, mashed potatoes, rice, or crusty bread.

It should flake easily with a fork, look opaque (not translucent), and reach 145°F (63°C) inside
