You ever buy zucchini with all the best intentions and then totally forget about it in the back of the fridge Hhh Well same here and that’s exactly how these zucchini bars were born because they came out of guilt and a craving for something sweet and a slightly squishy veggie that seriously needed saving.

As expected I mean it’s zucchini and in dessert it felt a little wrong but then bam they turned out to be moist and fluffy and sweet little bars that somehow vanished before the pan even cooled and not pointing fingers but I might’ve had three in one sitting so oops.

After a couple of tweaks and one mild meltdown these bars became a full-on household favorite and even my kid who swears he hates green things ended up begging for seconds.Have you ever snuck veggies into dessert just to feel a little smug about it, Because no judgment here and these bars totally let you cheat the system in the best way.

Anyway let’s get baking because you’re gonna love how easy they are and how ridiculously tasty they turn out.

Ingredients :

  • 2 medium zucchinis shredded, about 2 cups
  • 2 large eggs
  • 1/2 cup vegetable oil or melted coconut oil
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or chopped walnuts

The first thing you need to do is preheat the oven to 175°C (350°F). Grease or line a 9 x 13-inch baking pan.

Second, in a large bowl, whisk together the eggs, oil, brown sugar, honey, and vanilla until smooth and combined. Then, add the grated zucchini and stir. There’s no need to peel it first; just wash and grate it In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Add the dry ingredients to the wet mixture and stir gently until combined.
