How to Make BBQ Chicken Fried Rice
Step 1
First, mix the BBQ seasoning blend together and then toss it with the diced chicken breast. After that, for best results, let the chicken sit at room temperature with the seasoning for 10 to 20 minutes before cooking.
Step 2
Next, to cook the chicken fried rice, heat 1 tablespoon (16g) of olive oil in a large skillet over medium-high heat. When the oil is hot, add the seasoned chicken to the pan in an even layer. Let it cook for 60 to 90 seconds so the chicken can brown, then flip it and cook for another 2 to 3 minutes until it is fully cooked. Once done, transfer the chicken to a plate or bowl and set it aside.
Then, add the remaining 2 tablespoons (32g) of olive oil to the skillet and carefully add the cooked rice.
Step 3
Afterward, create a space in the center of the rice and crack in the eggs. Scramble them in the center of the pan before breaking them apart and mixing them into the rice.
Now, add the BBQ sauce and stir everything together. Continue cooking for another 30 to 60 seconds until the sauce starts to caramelize at the bottom of the pan.
Step 4
Finally, turn off the heat and return the chicken to the pan. Toss everything together and serve immediately.
