Cucumber Sandwiches Recipe

I used to think cucumber sandwiches were kinda meh because who really gets excited about cucumbers on bread right, But then plot twist I had them at a family picnic and that’s where Aunt Lily brought her “secret” version so let’s just say my expectations were embarrassingly low but one bite turned out to be a total game-changer.

It was a hot summer day and the only shady spot left was under a squeaky old swing set so we sat on a patchy blanket while sweating and laughing and somehow devouring these dainty little sandwiches like we hadn’t eaten in days because they were light and crunchy and weirdly refreshing which made me realize who knew cucumbers could be this fancy.

Now I’ve tweaked her version myself though,It was something fabulous and delicious.

Have you ever tried making these yourself because if not don’t stress since this recipe’s so simple you could probably whip it up mid-laundry cycle or even while pretending to clean the kitchen.

Just don’t blame me if you end up eating a whole plate solo because no judgment here as I’ve definitely been there.

How to Make Cucumber Sandwiches

Step 1

The first thing you need to do is prepare the cucumbers: Wash the cucumbers well. If desired, peel off the skin for a smoother texture. Using a sharp knife, slice the cucumbers into very thin slices as thin as paper. Sprinkle a little salt over the slices and let them rest for 10 minutes to remove excess water. Then pat them dry with a paper towel.

Step 2

Second: Prepare the spread: In a bowl, mix the softened cream cheese with the mayonnaise (if using), fresh herbs, a pinch of salt, and a pinch of black pepper. Stir until smooth and creamy. Taste and adjust as needed.

Step 3

Now: Prepare the bread: Arrange the bread slices. If desired, trim the crusts to give the sandwiches a neat appearance this is a traditional look and easier for kids to eat. You can also toast the bread lightly for more texture, although soft bread is usually used.
