Easy Lemon Bar Cookies

You know those days when everything just feels off Well, that was me last Tuesday and I had a serious craving for something anything that felt bright. I wasn’t planning to make anything fancy but I definitely needed a little pick-me-up so I thought of these lemon bar cookies.
They were total lifesavers and I mean it.

These cookies are soft and zesty while the center stays slightly gooey and the edges have just the right amount of chew. Basically, it’s like sunshine baked into a cookie so if you’ve ever had a bite that made you smile instantly, then you know exactly what I mean.
And don’t worry if your lemon curd layer turns out a bit uneven since mine always does too. It’s homemade not a photo shoot so it doesn’t need to look perfect.

That said, grab some fresh lemons then preheat your oven because we’re about to chase away the gloom one delicious bite at a time.
Oh and maybe hide a few cookies afterward since they tend to disappear really fast.

Ingredients :

For the cookie crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the lemon topping:

  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 2/3 cup freshly squeezed lemon juice about 3–4 lemons
  • 1 tablespoon lemon zest
  • Powdered sugar for dusting

How to Make Lemon Bar Cookies

Step 1

The first thing we need to do is preheat the oven to 350°F (175°C). Line a 9 x 13-inch baking pan with parchment paper or lightly grease it with oil. This will make it easier to remove later.

Step 2

Now let’s make the crust. In a large bowl, cream together the softened butter and sugar until smooth. Add the flour and salt, and mix until the dough resembles fine breadcrumbs. Press the dough evenly into the bottom of the prepared pan.

Step 3

Then bake the crust. Bake for about 18-20 minutes, or until the edges are lightly golden. While it bakes, you can prepare the lemon topping Next, make the lemon filling. In another bowl, cream together the sugar, flour, eggs, lemon juice, and lemon zest until smooth. The mixture will be runny—that’s okay!

Step 4

Pour the batter and bake again. Once the crust comes out of the oven, pour the lemon mixture over the hot crust. Return the tray to the oven and bake for another 20-25 minutes, or until the topping is firm and no longer wobbles in the center.

Step 5

Finally, cool and cut. Let it cool completely at room temperature, then refrigerate for at least an hour before cutting into biscuit-sized squares. Sprinkle with powdered sugar before serving.

Don’t overbake the lemon layer; it should still have a slight jiggle when you take it out of the oven. It will firm up as it cools.

I love these cookies with warm tea, and sometimes I enjoy them with a cold drink like fruit juice or another cold beverage. My son sometimes puts ice cream on top of them, and he really enjoys them, especially on hot days. He and his little sister always ask me to put these cookies in their school lunchbox, and I do as they ask.
