We were starving and it was the kind of hunger where you start asking yourself what might still be edible at of the kitchen
It was one of those nights when everyone felt too tired and no one wanted to cook so we ended up rummaging for dinner like cat in a pantry Hhhh.
I opened the cupboard and I saw spaghetti and garlic and olive oil so I thought that we were going to make it work.
I had made aglio e olio before but to be honest my first attempt ended up with burnt garlic which turned everything bitter so the second time I forgot the chili flakes and that was a tragedy but when it finally came together with golden garlic and silky oil and just a whisper of heat then it turned into pure magic and I found myself wondering how something with just four ingredients could taste that good.

- 400g spaghetti or your favorite pasta
- 6 garlic cloves, thinly sliced
- 1/3 cup extra virgin olive oil
- 1/2 tsp red pepper flakes or to taste
- Salt for boiling water and seasoning
- Fresh parsley chopped, optional
- Grated Parmesan cheese optional
How to Make Pasta aglio e olio
Step 1
The furst think you have to do is Boil the Pasta Fill a large pot with water and add about 1 tablespoon of salt. Bring it to a boil over high heat. Add the spaghetti and cook according to the package instructions until al dente firm to the bite, usually about 8-10 minutes.
Step 2
Now you have to Prepare the Garlic and Oil While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and cook gently, stirring often, for about 2-3 minutes. The garlic should become golden but not brown or burnt, or it will taste bitter.

Step 3
and Add Red Pepper Flakes Add the red pepper flakes to the garlic oil and stir for 30 seconds to bring out the heat and flavor . then Combine Pasta with Garlic Oil When the pasta is done, reserve about 1 cup of the pasta water and drain the rest. Add the pasta to the skillet with the garlic oil. Toss it all together, mixing well so that the pasta is coated in the oil and garlic.
Step 4
Adjust the Texture If the pasta seems dry, add a little of the reserved pasta water, a few tablespoons at a time, until it becomes silky and coated.and finally you can Garnish and Serve Sprinkle chopped fresh parsley and grated Parmesan cheese on top if desired. Serve hot and enjoy!
