I first tried it in Maui when I was half asleep and sunburned and completely starving then the bartender handed me this swirly, tropical masterpiece as if it was just a regular thing. I took one sip and suddenly I was wide awake and grinning like a total goof since it had coconut plus pineapple and strawberries—basically a smoothie that’s pretending to be a cocktail which makes it kind of dangerous.

I tried making it at home the following weekend but I forgot to freeze the fruit so it ended up this pinkish-beige color. It still tasted okay however it looked more like a sad milkshake which was definitely a rookie mistake.

Yet when you actually get it right—oh man—it’s amazing because that bright red “lava” flowing through the creamy coconut layer is a total showstopper.

How to Make Lava Flow Drink
