Well, that was me last weekend when I spotted a half-used tub of ricotta sitting in the fridge. It looked a little sad and I also noticed a jar of honey that I normally only use for tea along with some pistachios left over from that one time easy Pistachio Pie I tried to be a snacker which, by the way, didn’t last.
So without overthinking it, I decided to mash them all together. I didn’t have a plan but it was one of those lazy Sundays when you just throw things together. And just like that, these little Ricotta Pistachio Honey Bites came to life.
They’re creamy while also being nutty and sweet although not too sweet, you know what I mean They go perfectly with coffee or even while you’re standing at the kitchen counter still open. Yes, I did that.

The first time I made them, I didn’t measure a thing. I just went with my gut and surprisingly, it worked out. So if you’re not the type to use exact tablespoons, don’t worry you’re in good company here.
And hey, there’s absolutely no judgment if you drizzle on extra honey because I always do the same.
