Mozzarella Pepperoni Croissant Rolls

Have you ever had one of those “Happy Sunday turned snack attack” kind of days Well, that was us last weekend because we were knee-deep in couch blankets and movie marathons were rolling when suddenly—boom—hunger hit but not the “make a whole meal” kind rather just something cheesy and something warm.

So we rummaged through the fridge and we found pepperoni from pizza night then we grabbed string cheese from the kids’ lunch stash (sorry, kiddos) and we even pulled out a can of crescent dough I swore had expired last year but spoiler alert—it didn’t.

To be honest, half a Croissant tray was a total mess since I overstuffed them like it was a competition so cheese ended up everywhere and it looked like a pizza crime scene.

However, the second “half a Croissant” was pure magic because they turned out golden and flaky and gooey—little rolls of joy as if a mini calzone and a croissant had a delicious baby.

Have you ever made something so easy Well, this is exactly that and trust me—there’s absolutely no judgment if you pop three straight off the tray because I’ve definitely been there too.

Notes

  • Don’t overfill the rolls — too much cheese or pepperoni can cause them to burst open
  • Add a light brush of melted butter on top before baking for a golden, buttery crust.
  • Roll tightly but gently to keep the fillings in place without stretching or tearing the dough.
  • For extra crispy bottoms, bake the rolls directly on a pizza stone or cast-iron skillet.
  • Brush rolls with egg wash (1 beaten egg + 1 tsp water) for an extra shiny, golden look.
