The dough should feel soft but not sticky. If it feels too dry add a spoon of water and if it feels too wet add a spoon of flour.

As soon as finished turn the dough out onto a clean surface and knead it for about 5 to 8 minutes. Push the dough away from you then fold it back over itself and repeat. This helps build strength and makes the dough smooth and stretchy. When it feels elastic and springs back slightly it is ready.

With that done place the dough back into the bowl and cover it with a clean towel. Let it rise at room temperature until it looks puffy and has grown in size. As soon as finished line a baking sheet with parchment paper. Gently turn the dough out onto the counter and divide it into equal pieces. Roll each piece into a rope about the length of your hand. Tie each rope into a loose knot and tuck the ends underneath.

Follow up by place the knots on the baking sheet leaving space between them so they can rise and bake evenly. This step is great for kids because there is no wrong way to knot the dough.
