You know that feeling when you swear you will make a healthy snack and then you somehow end up making dessert and that was exactly me last Saturday because I had this whole wholesome breakfast plan going with oats and blueberries and no nonsense yet somewhere between stirring the filling and taste testing and maybe even over testing the crumble topping it turned into something.

Dangerously delicious and the funny part is that these bars were supposed to last all week yet spoiler alert they did not as my kids inhaled half the pan before they had even cooled and I cannot exactly blame them since have you ever bitten into something.

So warm and jammy that you instantly forget the word portion and the first time I tried this I thought alright it is fruit and oats so it is totally fine to have three or maybe four and there is no judgment if you eat them straight from the baking dish because trust me I have been there and here is a little tip from experience that if your

blueberries start bubbling over the sides then do not panic since that messy and sticky edge is actually the best bite hands down.

If using frozen blueberries, don’t thaw them first this keeps the filling from getting too watery.

  • 1/2 cup (100g) brown sugar, packed
  • 1/2 cup (115g) unsalted butter, melted

  • 1/4 teaspoon salt
  • 2 cups (300g) fresh or frozen blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

How to Make Blueberry Oatmeal Bars :

Step 1

First of all, we have to Preheat the oven to 350°F (175°C). Line your baking pan with parchment paper, leaving some overhang for easy removal later and Make the crust and topping: In a large mixing bowl, combine flour, oats, brown sugar, baking soda, and salt. Pour in the melted butter and mix until the mixture looks crumbly but sticks together when pressed.

Press most of the mixture into the pan about two-thirds to create the base. Make sure it’s evenly spread and pressed down firmly after that Prepare the blueberry filling: In a medium bowl, mix blueberries with granulated sugar, cornstarch, and lemon juice. Stir gently until the berries are coated then Spread the blueberry mixture evenly over the oat crust in the baking pan.

Step 3

Finally Sprinkle the remaining oat mixture over the top of the blueberries, letting some berries peek through for a pretty look and Bake for 35–40 minutes or until the top is golden brown and the blueberries are bubbly then Cool completely in the pan before lifting out and slicing into bars. This helps them set and hold their shape.
