What to Eat with Chicken Mushroom Rice ??
Chicken mushroom rice is savory, comforting, and full of flavor, making it perfect for weeknight dinners or cozy family meals. I love pairing it with fresh, light sides like my Easy Cucumber Caprese Salad to add brightness and crunch alongside the rich rice. For drinks, a refreshing beverage like Chilled Cucumber Lemonade or a simple iced tea works beautifully.
When we’re serving it for a family dinner, I like adding steamed vegetables, roasted carrots, or a side of garlic bread to round out the meal. My kids enjoy it with a little melted cheese on top, while my husband loves pairing it with a crisp salad or pickled veggies for extra flavor and texture.

How to Make Chicken Mushroom Rice :
Step 1
The first move is heating oil or butter in a large pan or pot over medium heat. Add the chopped onion and cook until soft and lightly golden. Stir in the garlic and cook briefly until fragrant.

Step 2
On the side add the chicken pieces to the pan. Season lightly with salt and pepper. Cook until the chicken is no longer pink on the outside. It does not need to be fully cooked at this stage and add the sliced mushrooms and stir well. Cook until the mushrooms soften and release their moisture. This helps build flavor in the dish.

Step 3
As the next step stir in the rice and mix it with the chicken and mushrooms. Let it cook for a minute so the rice lightly toasts and absorbs flavor then pour in the chicken broth or water. Bring everything to a gentle simmer. Cover the pan, lower the heat, and let it cook until the rice is tender and the liquid is absorbed.

Step 4
Once it’s ready once cooked, fluff the rice gently with a fork. Taste and adjust seasoning if needed.

Sprinkle with herbs before serving.
