Last summer, my family and I decided to recreate one of those amazing food cart experiences at home, and it was Street Corn Chicken Rice Bowls. It sounds fancy, but it totally isn’t! Although I burned the corn the first go around because, classic me, I got distracted by the kids arguing about who had more lemonade, guess what.It turned out to be one of those happy kitchen accidents since slightly charred corn, juicy grilled chicken, and fluffy rice made it perfect.

Ingredients :

  • 2 cups cooked white or brown rice
  • 2 cups corn kernels fresh, canned, or frozen
  • 1 tablespoon olive oil
  • 2 chicken breasts, sliced thinly
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 teaspoon paprika
  • 1/2 cup crumbled cotija or feta cheese
  • 1/4 cup chopped cilantro
  • Optional toppings: sliced avocado, jalapeños, diced tomatoes, lime wedges

How to Make Street Corn Chicken Rice Bowl

Step 1

The first thing you need to do is cook the chicken: Heat olive oil in a skillet over medium heat. Season the chicken strips with chili powder, cumin, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Set aside.
