Have you ever had one of those days where you’re craving something fancy and from fish dishes,but not too fancy Hhhh because that was exactly me last Thursday and the fridge was full of leftovers while I had zero motivation then suddenly”bam”I remembered salmon fillets which were hiding behind the oat milk as if they knew they were about to be the star of dinner.

Now, I’d love to say I whipped up the mango salsa on however since had way too much lime to the point that it reached pucker-your-face, regret-your-choices levels of lime but hey we live and we learn so we taste-test.

For the Salmon:

  • 4 salmon fillets skin on or off
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon garlic powder
  • Juice of 1 lime

  • 1 small red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 small jalapeño, seeds removed and chopped optional
