You know those days when you’re juggling a million things and dinner feels like one more mountain to climb? Well that was me last Thursday so I needed something easy and foolproof and that’s when I turned to my trusty slow cooker because I thought, “Taco night it is”.

Since I had some chicken and salsa and taco seasoning on hand I tossed everything in the crockpot then I hoped for the best and guess what? By the time dinnertime arrived my kitchen smelled like a fiesta and the chicken was so tender that it practically shredded itself
Even better everyone built their own tacos so there were fewer dishes for me which means win-win, right!!!

Ingredients :

  • 3 boneless, skinless chicken breasts fresh or frozen
  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • 1 cup salsa any kind you like chunky, mild, or spicy
  • ½ cup chicken broth or water
  • Optional: 1 small can of diced green chilies
  • Taco shells or tortillas hard or soft
  • Toppings: shredded cheese, lettuce, sour cream, avocado, diced tomatoes, jalapeños, cilantro, lime wedges

How to Make Crockpot Chicken Tacos

Step 1

The first thing you need to do is add the ingredients to your slow cooker. Place the chicken breasts in the bottom of the slow cooker. Sprinkle the taco seasoning over the chicken. Pour the sauce and broth over the chicken. If using, add diced green peppers.

Second, cook on low and low heat. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours. You’ll know it’s ready when the chicken is tender and shredded easily.
