Well, this pasta was one of those happy accidents because I was staring What should I prepare for dinner Friday evening since I was starving and tired and dangerously close to ordering takeout once again. But then, there it was a lonely bag of spinach plus a handful of cherry tomatoes along with half a box of pasta left from who-knows-when.
I’m not gonna lie because I didn’t expect much but wow one bite in and I was like “Wait… did I just make something amazing by accident”

It’s simple and fresh and it comes together faster than you can say “Where’s the Parmesan” In fact, even my picky cousin who claims spinach is rabbit food went back for seconds so that felt like a victory.
Have you ever made something so easy that it almost feels like cheating. Because this is that kind of dish. Toss then stir then done.
So let’s get into it because this pasta might just become your weeknight hero.
Ingredients :
- 12 oz pasta penne, spaghetti, or your favorite type
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 small onion, chopped
- 2 cups cherry tomatoes, halved or one 14 oz can of diced tomatoes
- 4 cups fresh spinach or 1½ cups frozen spinach, thawed and drained
- ½ teaspoon salt adjust to taste
- ¼ teaspoon black pepper
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes optional
- ¼ cup grated Parmesan cheese optional
- ½ cup pasta water reserved from cooking
How to Make Delicious Spinach Tomato Pasta

The first thing you need to do is cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until tender. Before draining, scoop out 1/2 cup of the pasta water and set aside. Then drain the pasta.

Second: Stir-fry the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Now you can add the tomatoes and seasonings: Stir in the cherry tomatoes or canned tomatoes with salt, pepper, oregano, and red pepper flakes, if using. Simmer for 5-6 minutes until the tomatoes break down and form a sauce.

Then add the spinach: Stir in the fresh spinach and gently toss until wilted, about 2-3 minutes. If using frozen spinach, be sure to thaw it and drain well before adding it. Now, try tossing the pasta with the sauce: Add the cooked pasta to the pan with a little of the pasta cooking water. Mix well until the pasta is coated with the sauce.

Add the cheese optional: If using, sprinkle Parmesan cheese over the top and stir until melted. Finally, serve warm: Garnish with more cheese, fresh basil, or a drizzle of olive oil, if desired!
